My Favorite Gluten-Free Recipes
In March 2023 I came back from a trip to Germany, where I had beer and a lots of bakery items. Flying over, I felt already not too good and had to bring a cane as in Europe you walk a lot and I had some problems before flying over.
One day in April it became even worse and I could hardly move my right knee. I did not want a new knee, but I was close to accepting that it was necessary. Luckily I was searching for food that could help with Arthritis. I read 12 articles, some from doctors or hospitals, most from patients who had a similar problem that I had. Pretty much everyone said, gluten is the problem, some also mentioned night shades, fatty meat, processed meats, heavy cream, etc.
I cut all of these and two days later I could walk without the cane. I reintroduced all slowly (I hardly ever used processed meats) until only gluten was left over.
Sometimes I have a little bit of gluten, like 1/3 of a slice of cake or so (that works), but no beer and not much gluten. One day I had two beers and a roll with bratwurst and I felt it in my knee.

- Chicken Marsala
- Coq Au Vin
- Pasta with beef/vegetable sauce - my favorite pasta sauce. I use chickpea pasta.
- Shrimps - a fast and easy recipe to impress your guests, serve them on a platter with tooth-picks or on small slices of bread.
- Tropical Salmon - I have never seen salmon in tropical waters, but this fish tastes great with a tropical touch. Use wild-caught salmon filets if you can find them and not farm-raised. They are more healthy and taste better. If you do not have salmon, take Cod, or Mahi Mahi instead. Be creative, use what you like or what you have.
The use of fruit and mushrooms (if you do not like mushrooms, just delete this item) and sliced bell peppers and curry gives the fish a very delicate taste. I know, this is not a real Caribbean recipe as there are not salmons to be found near the islands, but it goes well with these ingredients. Another important ingredient is finely grated ginger, this gives seafood a very delicate taste.
- Green Pepper-Corn Sauce- this is a great sauce, a French recipe to accompany steak. I love to use it over grilled steak or when grilling a hole beef tenderloin for guests.
